Where should my hands be when I'm in guard? Should I have control of their upper body? If so, where should I grab (assuming no gi)? Head control? Underhooks? Overhooks?? What do you guys think give you the most control in guard?

I like head control and other hand on back of tricep, doesn't matter arm...strictly sport jiu-jitsu of course,
MMA = Grabbing them and keeping them down over/underhooks/headcontrol.

It all depends on what you are going for. Double underhooks is great for breaking a guy down but not very good for sweep attempts (where you need more space). Just holding a guy in guard is just a transition stage so the double underhooks is a stalling game while you are getting ready for an attack and are going to move to something else.
On the other hand, the double underhooks in HALF Guard is a whole different story and the base for LOTS of attacks (the whip up and the start of much of the Eddie Bravo attack set ups).
